The switch actually does keep track of your gameplay as far as logging hours for each game.I remember people praising stamps in Nintendoland and saying they wouldn't mind a system wide implementation.
I also remember the Activity log on the 3DS and that was loved too for tracking your games and the time you spent on them. People were angry that didn't come back.
More options is never a bad thing
Think of the moons in Mario Odyssey and the Korok seeds/shrines in BOTW. These are all extras that will take you hours and hours.
To some, it's a chore, to others its a challenge or they don't want the game to end so they carry on playing.
A trophy or achievement or stamp will just be a system wide way of showing you or others that you've done it without having to launch the game.

Nintendo Switch is the only major console that still doesn't offer achievements, and it's better for it since the whole idea is stupid.
Some games like Oddysey and even Ultimate Smash Bros. have that extra stuff that I find meaningless like completing certain tasks or × amount of feats to fill out some photo album
Haven't really come across a game yet where doing every single feat was fun.
Usually challenges have rewards that at least have something to do with game progression. To me its a chore when there's nothing to it other than doing it.
I guess lean more to the story/adventure side of a game instead of prolonging its lifespan.
