Woke up early this morning to grill up 5 pounds of sirloin to bring to my uncle's house later. Was done with grilling, slicing them up, packing them, and washing the dishes before 8 am. If I didn't have to drive I'd probably be drinking right now.

Forgot to post, but we hosted Friendsgiving on Sunday. We were in charge of turkey, stuffing, cornbread casserole.

Honestly highlight though was our friends who were in town from Switzerland who brought this incredible Gruyère with them and the Tete du Moine

Garlic Mash
Jalapeno Cornbread Casserole

Don’t mean to toot my own horn but beep beep.

I worked fryers at few places ran by some James beard winning dudes. There’s a level to it you will never do at home.

I used to cure the fried chicken overnight in aromatics, salt and pepper. Then confit it in duck fat to cook it then fry it after. I promise you it didn’t taste like oil.

It’s just not happening for the home cook, it would cost you 200 bucks to make it.

You could do fries at home easily though
hate frying at home but I love the taste and texture. Trying to go your route in the future to take it up a notch.

Next house we stay at I’m going to need a nice size back yard to fry outside.

The guy we rent from. His dad has a wok setup outside. I looked at him crazy but then understood why and it made so much sense.

My boy lives in a pole barn :lol he just finished his living area.

Wok is Smokey af. I get it.

It’s cool though we’re in mn and it’s cold so you just fire up the black stone inside the shop with no worries.
