I went to my local grocery store (Harris Teeter) and asked the butcher if he had beef ribs that weren't cut. He went to the back and brought out a vacuum sealed pack of four plates. I just asked for one plate as this was my first try at beef ribs.you get the ribs from a butcher shop or online?

Suggestion, putting a water pan in the bottom barrel of your kettle. Not sure if you did or not, I can't really tell from the pics.
It promotes moisture and helps regular temps.

Be careful on housing the egg in a wood table if you run it hot. Lots of stories of fires. I house mine in a metal table for that very reason. The feet help but be very careful.
