Official BBQ thread

Ribs tomorrow for my birthday.

Costco here only has kind of scrawny loin ribs but I found a new supplier for spare ribs - they come frozen but you get nearly twice as many for the same money. Thawed half the box the last few days and going to have a look at them in the morning to see if I will trim them to St Louis style or just leave them.

You’ll notice that I didn’t trim them St Louis style - did them as whole spares.
 
Shoulda trimmed them though - the rib tips weren’t as good and make it harder to eat.

With the rest of the box I’m going to trim them first and see how that turns out.
 
Just pulled three racks of ribs off of the XLBGE. Used Pecan wood chunks, Garlic Salt, Dizzy Pig Crossroads, Dizzy Pig Jamaican Firewalk and Dizzy Pig Tsunami Spin. Used the 2-2-1 method. Steamed with apple juice for added tenderness. Will eat these with fam tomorrow.

I could not find a brisket less than 15lbs yesterday so smoking ribs today. This is my first time smoking ribs I have only smoked brisket and chicken in the past. I feel like I’m really going to get into grilling/smoking this summer so I’ll be in this thread more.

I think I’m probably halfway there on these.

You ask and you shall receive. These are just various pics from the time I’ve moved in til the present.

Last year I put grass seeds down, but after a few straight days of down pours, they washed away. I have to try it again this year.

I have to finish sanding the old paint off and apply new stain. After that, patio furniture.

Is brisket hard to do on a charcoal grill or should I just not even consider it and save up for a smoker?
 
Didn't know we had a thread for BBQ.

Picked this up 2 weeks ago and haven't stayed off it.

Gonna reverse sear some Ribeyes tonight.

Here is some marrainated chicken from over the weekend. This grill really makes charcoal simple.

I wouldn't say so. You are dealing with a smaller space and trying to manage temp a little different but you don't need a large smoker to make some great brisket at all
