Not sure about the water, but I use a little olive oil. I leave it in the pan with the top off for a little bit to get it crisp and then cover it to melt the cheese. Works especially well with Neapolitan Pizza.

They said the pizza was "too square-ish"Where are you located? You might want to see if you have a Jet's Pizza chain in your area for Detroit Style.
