Topped it off with ketchup and hot sauce
 
Yeah that old way is what intimidates folks. Reverse or sous vide is better.
Yeah we've been sous vide and then finishing in cast iron for a minute now. Gets it absolutely perfect. Have a tough time thinking why I should do it any other way going forward.

Sous vide is good and I need to use mine more

Definitely a different end result though compared to a higher/direct heat cook

Wouldn't say it's any better or worse just different
