I usually make them with the white corn maseca instant masa, but all I had was yellow this time, which is why they're darker than usual. I also added in rendered pork fat from the chicharron pork belly that I cooked to put in them. But they're great with cheese alone. I also made a curtido (pickled cabbage and carrots).
 
The only thing I really cook is hard boiled eggs (8 whites, 1 whole a day) and ground turkey meat but been reading how bell peppers are high in vitamin C so got busy with these.

Ground beef in there topped with mozzarella (3) and cheddar (1). Wife went with mozzarella. Cheddar was far better.
