For safety reasons chicken has to be cooled to a certain temperature. There’s two ways of cooling them. Air chilling and the other is by dipping chicken in ice water. Dipping the chicken in water causes them to absorb a lot of water which dilutes the flavor and makes the skin soggy a bit. Idk if anybody notices but most chicken without doctoring doesn’t taste like **** at all. All animal foods should have a distinct taste to them.
Air chilling is a cooling process in which the chickens pass through several cold chambers with purified air which makes for less added moisture. Because of this, the natural juices aren’t diluted which results in more flavor and tenderness. And you won’t find none of that weird slime you find in other chicken packages
