The nitrites in cured meat comes from the pink salt.

you can cure meat with kosher salt which is what I’ve always done. You mess up with curing salt and you can kill someone so I always stay away from it.
 
Making this recipe at the moment:



Swapped the radishes for pickled red onion and the shredded cheddar for queso blanco, but I'm fairly excited for the final product.

They have this at a place by me. I never tried it but it looks good
 
what makes it peruvian???

the spice/marinade combo - olive oil, lime juice, garlic and spices (peruvian chiles, garlic, etc)
not so different from other South American style rotisseries but I wanna say they were popular in Peru first

Sauce looks interesting. The spot I go to has a green sauce that looks a lot lighter, and then a yellow mayo (I assume) based one.

seems like it's mostly cilantro and jalapenos and some oil. reminds me of chimichurri
wish I would've noticed they only gave two of those, could've used way more
