Nice. I might try this again on the weekend with Beef and the bones. Gonna add some allspice and pho seasoning cubes to really kick it up.Made Birria again. This time I included beef marrow bones to simmer in the broth and doubled the seasonings. The bone made a hugw difference in flavor
First few minutes of boiling. The bone will produce impurities that I skimmed off
Color once the Guajillo peppers started to break down
I blended the peppers and added them, giving a deeper red color
Shredded the beef in big chunks
