They have to be ripe, and you have to fry them long enough to where they just get golden brown. You don't need enough oil to the point where they are deep fried, but you want more than a sauteehow do i get em like THIS

I never season them just throw them slimes things in the fryer until they carmelize.
Be careful that sugar will burn tf out of your hand. They will also make a MESS out of your fryer basket.
