Well kayfabe wise, you wanna kick out before 3 because it gives you a couple of seconds to rest before you have to kick out.

And like Regal said as far as why wrestlers pin people multiple times is because they wanna tire out the competitor so they make him kick out a lot. Wasn't part of your question but thought it was good knowledge.
