Why has Filipino food never gone mainstream?

. If I eat out I always go for the Tocilog with 2 pieces of spam, crispy, on the side. But at home its Longanisa. Since every spot i go to if you get longsilog they only give you like 2-3 pieces.
 
1: Filipino food is not that original.. 3/4s of our menu can be found in other Asian or Spanish cuisines in 1 form or another.. 
2: mom & pop Filipino joints (at least from my experience dining in the Bay Area, LA, San Diego, Vegas, & Reno) often serve subpar food at inflated prices.. $3.00 for a stick of bbq w/ 3 little pcs of pork?.. no thanks
