Cut into spears. Soak in cold water for a while. If you skip this step, your fries will crumble apart and have the texture of a baked potato, when you really want a crisp shell with mashed-potato-like texture on the inside.
After you soak, fry for 4-5 minutes. Remove from oil and let it cool. After cool flour the cooked fries. You can add whatever spices you'd like for flavor. Fry again until golden brown.
The shell is now crispy while the potato inside is very soft. Enjoy your time at the treadmill...I always do lol.
