Quick prep for some rice and peas that I’m making with fresh coconut milk.

carbonara is pretty tricky..u have to be precise with the ingredients as well as the timing of everything
 
I don't even really like coconut, but coconut risotto is fire.
First time hearing coconut risotto. I'll try it. I love coconut special the green ones that have a ton water and meat/jelly (jelly coconut). I hate the shaved ones you find in the Asian markets out here in LA. They taste weird. One think I miss about NY, Spanish dudes with the fruit carts/van on the side of the road.

What are you making with it?

Plan on making coconut milk with the coconut or the Jamaican tart "gizzada". Coconut milk is super simple. Hardest part was deshelling the coconut. All you need is water, coconut, blender, and a strainer. I add coconut milk to rice, cornmeal porridge or my smoothies in the morning. I'll post pics of the milk process in the a.m.
