First time hearing coconut risotto. I'll try it. I love coconut special the green ones that have a ton water and meat/jelly (jelly coconut). I hate the shaved ones you find in the Asian markets out here in LA. They taste weird. One think I miss about NY, Spanish dudes with the fruit carts/van on the side of the road.

Plan on making coconut milk with the coconut or the Jamaican tart "gizzada". Coconut milk is super simple. Hardest part was deshelling the coconut. All you need is water, coconut, blender, and a strainer. I add coconut milk to rice, cornmeal porridge or my smoothies in the morning. I'll post pics of the milk process in the a.m.

I had to watch the youtube video a couple of times to make sure mixed and tossed everything at the right time.
Turned out good, IMO. Wanted it to be a little more garlicky. Also added peas.
