food truck has been copped by my homie/roommate. me my boy and my old sous chef will be running it. we will also most likely be catering for local breweries. gets wrapped in vinyl next week then it's off to the shop to get turned into a food truck.

it's bbq. the menu isn't final yet but it will def have pulled pork and ribs. homies uncle has a farm and raises some good pigs and cows. local organic yada yada yada so we can get those for the low to cut some costs. i'm confident, especially with my sous chef working for us. dude runs a beard award winners kitchen and has endless connections. we're still testing now. he's bringing over a case of ribs so we can continue to test and we're working with him on the menu as well.

best part is we live across the street from his restaurant so we can prep there. i'm also starting to work there again since he offered me a wage i couldn't refuse last night.

not bad. the chicken >>>> waffle. could've eaten them separately.

A dry rub for one rack and Famous Dave's "Texas Pit" BBQ sauce for another.

Make a balsamic bbq sauce for them and wrap them in foil with salt and thyme for 4 hours in the oven at 250. When they are cooking have your sauce on the stove reducing throw that on the last 15 minutes of cooking. Most lazy yet fire ribs ever.
