just off the top of my head. Good thing about Maui is it isn't that big. You should be able to explore almost the whole island depending how long you stay.

the only thing i skipped was the chili oil and cabbage. not sure if youre into it, but I would use this same exact recipe for "tacos de lengua". lengua = beef tongue.
