i prefer spots that deal with making pizza in the traditional way

which is why i kinda only eat at tony napoletana or sots like that

provisional kitchen (place serves an ostrich eg for breakfast/brunch)

I thought pizza made in California was generally scoffed at by east coasters.

majority of the time
stuck up
until they realize
"oh this black guy knows his stuff
this isnt his first michelin experience
he didnt have to save a months worth of paychecks to come here
is he famous"
that what i experience at the "culturally" white spots
but say i hit up a japanese michelin spot
or any other ethnic michelin spot
i notice i dont get treated any different
from any other guest
just something ive noticed
