Never been a peaty whiskey fan but finally picked up a bottle of Lagavulin 16, my god it's glorious. I think I love it because it reminds me of when I was young at my grandmas house in the country, the entire family outside having fun, enjoying the cool air and the smell of delicious food and the charcoal/wood from the outdoor kitchen.
- 1.5 ounces Gosling's Black Seal rum*
- Ginger beer**
- Limes
Fill a high ball glass with ice. Pour in the rum and top with ginger beer. If you like squeeze in a bit of lime juice and garnish with lime wedges.
* Any dark rum will do but for some reason Goslings is the traditional favorite.
** You really want strong, old school Caribbean ginger beer or maybe Blenheim's hot ginger ale. The drink was and is still associated with sailing and combating seasickness so you want really spicy and dry ginger beer for this drink. Bonus points for making your own ginger beer. I am doing it and it is pretty easy, much easier than making beer in your home.
'12 Mount Veeder Cabernet (Napa Valley) with dinner tonight & '07 Atlas Peak Cabernet (Napa Valley) tomorrow. Also have Chivas 18 I might indulge in with dessert. Find it to be a value buy for scotch drinkers.
