Putting shoes in a food air-sealed bag seems like a horrible idea; your shoes will probably crack in half once you unseal them.
Stops dust, dirt, moisture, the general air form hitting your shoes. Vacuum sealed away so you can't wear them to get them dirty and hold them "safe" till you're ready to open them. I don't see any other way to keep them clean and prema stop them from yellowing. The obvious factor, you won't be able to wear them
But by the time you're ready to wear them it'll probably crumble anyways like all shoes over time.
