Well the color to b/w in photoshop is an issue of the contrast management in photoshop being superior to that of the camera's computer.
Shooting in jpeg vs raw is an issue that jpeg are degrading files. i.e. every time you edit a jpeg orginal information from the orginal photograph is compromised, whereas raw remains the same, so you can effectively edit it i.e. change it from color to b/w, resize, whatever...
The common term for files that don't degrade is lossless. A tiff is probably the most common..
