Fan theories of where the stories go have been pretty good post GOT.

Daenerys getting picked up by Drogon after getting stabbed and flying to Valyria with Drogon to get revived by a red witch always seemed like a good story to tell. But the more time that passes, the more unlikely that story seems.

It’s probably difficult to write post GoT stories without book guidance.

Now the Velaryon dynasty returns to Westeros take back its rightful seat on the Iron throne.

They've been announcing shows since the OG ended. One has come to fruition nearly b5 years later. Others are being cancelled right and left.

That true and it takes a lot of work getting them up and running passed the concept stage but those are all of the projects that haven't been cancelled and are moving forward as of now.

They've already been doing the casting for the Knight of the Seven Kingdoms and filming starts in June so that'll be the next one we'll get most likely.
