Full disclosure it didn't slice well. Gotta figure out what I did wrong.
She was probe tender, gave it about 3 hours of rest...
Some of the slices were good and passed to bend test but toward the end it was not tender at all.
Back to the drawing board. Enjoy your labor day fam.

I’m never sure if that means it needs more or less time - is it dried out or not rendered properly?
It’s expensive to experiment with which doesn’t help.
