Just got my latch kit and door seals installed. That should certainly seal it better - although it needs to squash down a bit as the firebox door is being held open slightly.

Just been to Costco for some ribs. I'll prep them in a bit for smoking tomorrow.

Apparently there is an argument on #BlackTwitter about boiling ribs before throwing them on that fire
 
I do NOT like crock pot ribs lol. I want a tender clean bite thru rib. Basically when I pick them up with tongs I grab them the long way and I pick up little over half,the part that hangs tears but doesn't fall apart that's it. I don't like to dry or tough they gotta have some tenderness but just a tad bit of "bark" on surface.
 
Don't know what it is, but my meat always ends up pasty in the crock pot. Texture is terrible.
 
Most folks who worry about how it's cooked don't do **** but enjoy it once it's made anyways. I've made good ribs all ways, oven, crock pot, sous vide then finish it on the grill/broiler or straight grill.
 
I like my ribs to have a little bite and texture. I like tender ribs but not mush ribs or ribs that instantly fall off the bone when you move them.
 
technically if they are fall of the bone they are overcooked.  however, i like my ribs overcooked, i love them falling off the bone.  I would never boil ribs, to each their own though.
