Beef Chuck. Cut it thin, against the grain. If you put it in the freezer for a bit it's easier to slice.

You just want a piece of steak with a considerable amount of fats on it.
If you are going to slice it because it wasn't precut, make sure you freeze it a bit so it's easier to slice.

I know you can't talk but this is a horrible take. Beans definitely belong in chili, honestly not even mad at there being multiple types in there.
*Edit: Chili that is used as a TOPPING can get away with no beans.
