The only time I had an issue getting a good sear on scallops was when I was trying to cook a big batch all at once in a large pan.
I just make sure they’re as dry as humanly possible before putting them in the pan.

While working at Panera bread I learned the trick of spreading cream cheese on the bread like you would mayo or something.. and then doing the rest like a standard grilled cheese.I forget how simple and delish a good grilled cheese can be!
Yeah you don’t need flour/cornstarch, but if you aren’t using you def gotta make sure they’re bone dry.I've always gone raw

I think the times I've had trouble I didn't dry them much ahead time and they released too much moisture during the cook
Last time I believe I left them uncovered in the fridge overnight
There's also "wet" and "dry" scallops which was news to me. Dry is what you want
