is a food mill necessary though? what else do yall use it for?
im trying to limit the number of appliances i have in the kitchen

A blender would incorporate the skin and seeds that you don’t want in a sauce. A food mill separates the skin and seeds. So in this instance a blender would not work.

Canned san marzanos are peeled already, so you can get away with using a blender or immersion blender. The key is to not over do it. If it turns pink you've gone too far

I've never really noticed any bitterness or difference in texture from the seeds. Hand crushing probably gives the cleanest flavor but it's not a huge difference imo
