Nah his process is ridiculous. The key to nice fluffy eggs is a hot skillet and to not let them cook all the way when the fire is on. Eggs cook super quick. When they are about 65% done I turn the fire off add cheese and let them finish cooking.

Isn't that basically his method? I made some that way this morning and they were definitely fluffy. It does take some time tho.
 
Way I've Gordon do it is cold pan, eggs and butter and constant stirring which isn't hard. Makes it nice smooth and fluffy even if you do it till a little brown.

Yup, that's exactly what I did. On and off heat a few times until it starts to form, and then you essentially just plate it right then.

this is how i always make scrambled. it's like risotto making

no milk/cream, some butter once the liquid egg is hot enough to start melting it

much better than the well done scrambled eggs Americans seem to love
