Trimmed, dry rubbed and cooked for about 3 hours at 350. Occasionally mopped with ACV and more rub. Next time I’ll cover with foil earlier in the process, not bad at all.

I like Graces Jamaican style.

But I feel like I am starting to move toward using Curry Pastes than just the dry.
