If I ask for anything Benedict and get a hard fried egg instead of poached, and a sprinkling of bag shredded cheese instead of Hollandaise, it’s going back

I don’t like runny or poached eggs so I asked for it like that. I added the cheese at home just cuz I’m greedy. Only attempted to melt is slightly cuz I didn’t want to overcook the crab. You can’t see it but there’s cajun sauce through the crab cake and under it along with spinach cooked in it

It is an acquired taste. Example a runnier egg works fine on avocado toast, I prefer a thicker runny yolk with benedicts though. Live a little
 
Yeah you need that run for a Benedict.

There's very few instances where I want my yolks cooked all the way through.

Walkerswood/Grace jerk sauce is legit as far as packaged anything goes. I'll still make a marinade, but throw some in as an emulsifier.

yeah, for sure home made is better but it will do the job.

thyme is so damn expensive I gotta go steal all the herbs if I’m making a big batch from my wife’s restaurant.
