1.) I have a e39 m5 and wouldn't trade it for a e60. You can get a nice one for about 30-42K, with low miles. You can either do a Dinan S3 conversion for about 610whp, or wait for the ess supercharger which is about 11,000 and puts out about 490-510whp.
2.) if you really want a e60 M5, get some headers, exhaust and get it tuned by abid from ASR. You will smoke cats, with this set-up. i still have much respect for the E39 M5. i saw one yesterday when i was running and had to do a double take. i'd buy a lemans blue one w/ the two tone sport interior and leave it stock.

what year/mileage is yours and how is the reliability?
I personally think the e39 m5 is one of the sexiest cars BMW has ever made. I have a Carbon Blk with the 2 tone blk/blu sport interior. The car is a 02 and just hit 50,000 miles. As long as you do the regular maintenance stuff, the car is very reliable.
Any other suggestions? I want something I can drive every day (I don't drive all that much but I don't want something impractical like a Lotus or a GT3).

jp.If your looking at a 997 they aren't as impractical as you think, but then again I have always LOVED driving so the car never seemed uncomfortable tome. There was a guy on RL who dropped his GT3 for a C63 and he absolutely loves it. All that torque in a luxurious package.

I like a usable trunk and four seats, I'm in college and I like being able to drive people if need be and transport some stuff. 997 is borderline....I know a Porsche is a much purer sports car, but they bore me since they're a dime a dozen in SD/LA.
