It's really strange how Tourette's only seems to make people say curses or offensive words though. The physiology nerd in me would like to know why that is.

That's because Tourette's is different for everyone. Some people just twitch or make weird facial expressions, others have random outbursts, and some do both. You've only seen it in the two ways mentioned because that's the entire condition. It's unwanted tics and involuntary movements.
