Noob question: when you guys get your denim tailored, do you ask for the regular hem or the original?

Stay true with the average joes. I would actually try them on first. In my experience, they are a little bit more fitted then the Levis (501); especially in the tights. It you are a 38 in 514s, they should fit you perfectly.

on another note...
ive noticed a lot of raw denim come in a size 34 in length. I am a sz 30 on length typically. Is there a recommended hem as far as how many inches to take off if any?

It's going to even out and shrink in length once you wash/soak them. If after the wash/soak they are still too long, get them done by a tailer/shop that does good chain stitching. But whatever you do, do not get them hemmed prior to a wash/soaking. You will be pissed when you finally do wash them and see that your jeans are now high waters.
If you plan on wearing your denim hard, have a good chain stitching is a must.
